- 810 medium shrimp, peeled & deveined
- 1 tsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- Salt & black pepper to taste
- 1 cup corn (fresh, frozen, or canned)
- 1 cup diced pineapple
- 1 cup diced tomato
- 2 tbsp diced red onion (optional)
- 1 tbsp chopped cilantro
- Juice of lime
- 1 cup cooked brown rice
- Extra cilantro for garnish
Instructions
- Cook the shrimp: In a skillet, toss shrimp with olive oil, smoked paprika, garlic powder, salt, and pepper. Sear over medium heat for 2-3 minutes per side until pink and charred.
- Make the salsa: In a mixing bowl, combine corn, pineapple, tomato, cilantro, lime juice, and salt. Mix well.
- Assemble the bowl: Place cooked brown rice in a serving bowl. Arrange seared shrimp beside it and top with salsa. Garnish with additional cilantro and lime juice before serving.
