  • 810 medium shrimp, peeled & deveined
  • 1 tsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt & black pepper to taste
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup diced pineapple
  • 1 cup diced tomato
  • 2 tbsp diced red onion (optional)
  • 1 tbsp chopped cilantro
  • Juice of lime
  • 1 cup cooked brown rice
  • Extra cilantro for garnish

Instructions

  1. Cook the shrimp: In a skillet, toss shrimp with olive oil, smoked paprika, garlic powder, salt, and pepper. Sear over medium heat for 2-3 minutes per side until pink and charred.
  2. Make the salsa: In a mixing bowl, combine corn, pineapple, tomato, cilantro, lime juice, and salt. Mix well.
  3. Assemble the bowl: Place cooked brown rice in a serving bowl. Arrange seared shrimp beside it and top with salsa. Garnish with additional cilantro and lime juice before serving.
