  • 1 can (400g) chickpeas, drained and rinsed
  • 1 red bell pepper, sliced
  • 1 small red onion, sliced
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup crumbled feta cheese
  • 1 tablespoon chopped fresh parsley for garnish

Instructions

  1. Preheat the oven to 400F (200C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine sliced zucchinis, chickpeas, bell pepper, and onion. Drizzle with olive oil and sprinkle with oregano, paprika, salt, and pepper. Toss until well coated.
  3. Spread the vegetable mixture evenly on the prepared baking sheet without overcrowding.
